Jenny's Quick & Fail-safe Fruit Cobbler

This came from our daughter's, Jennifer Shaw Kendrick's, mother-in-law, Willie Mae O'neal Kendrick and is (1) so easy that a non-cook can make it on the first try and (2) so delicious that you'll never be able to stop at one average helping!

into dish:

  • grease or spray (such as Pam) about 9 inch casserole dish.
  • pour in 4 cups sliced fruit (such as peaches or strawberries; or, an experimeter could use cooked grape hulls as used in Hull Pie).
  • pour one teaspoonful lemon juice over fruit.
  • sprinkle sugar/sweetener if you like.

the cobbler crust mix:

  • 1 cup self-rising flour.
  • 1 cup sugar.
  • 1 egg (DO NOT beat it).
  • thoroughly hand mix (with fork?) the 3 into dough "crumbles".
  • pour out the crumbles mix over dish contents.
  • THEN, melt a stick of butter (margarine or buttery spread) and pour over dish contents surface.
  • Sprinkle a little cinnamon over the top if desired.

 

BAKE, preheated 375 degrees F. 30-35 minutes (longer to brown crust)
