The Truth... What is it?





MaMa's Cheese Ice-Box Wafers

Betty's daughter, America Jill Drafts, found a brand (Parmesan Cheese Crisps by Fresh Gourmet, at Walmart) in late 2016 that she claims taste just like these.

Ingredients:

  • 1 pound (4 cups; 16 ounces) shredded NY State sharp or extra-sharp cheddar cheese (your choice is to degree of sharpness)...have @ room temp before starting
  • 2 sticks of margarine...have it room-temp softened before starting
  • 2 3/4 cups plain (all purpose) flour.
  • 1/2 teaspoon red pepper.
  • 1 teaspoon of salt.
  • 2 teaspoons of baking powder.

the process:

  • Heat oven to 350ºF.
  • Dump all ingredients into a bowl and mix thoroughly with hands.
  • Divide mix into 4 balls & roll each into a log & wrap each in wax paper and refrigerate or freeze.
  • Remove, one at a time, from cold & slice with wire cheese cutter into discs as thin as you prefer.
  • Place discs onto aluminum foil or parchment paper onto a cookie sheet.
  • Bake 6-10 minutes or until lightly brown. Immediately remove & slide foil or parchment with wafers onto cooling rack. Serve as is.
  • Experimenters: My mother (MaMa) also made cheese straws; and I think she did it by taking the above mix and using a pastry gun to squirt out ribbons of mix onto the baking sheet. The margarine component could be changed to butter. One could place some sunflower seed kernels or some other item onto the fresh-cut wafer surfaces before baking. And/or, one can use some other cheese to change the "cheese taste".
